Equipment

  • Cast Iron Skillet Crucial for achieving the authentic "charred" restaurant finish and maintaining high heat.
  • Blender or food processor  Necessary to emulsify the chipotle peppers and garlic into a smooth, thick marinade.
  • Meat thermometer To ensure the chicken reaches a safe internal temperature of 165°F (75°C) without overcooking.
  • Ziploc Bag or Large Bowl For evenly coating the chicken with the marinade.

Ingredients

  • 2 lbs 900g boneless skinless chicken thighs (recommended) or breasts
  • 2-3 chipotle peppers in adobo sauce finely minced
  • 2 tbsp adobo sauce from the same can
  • 4 cloves garlic minced
  • 3 tbsp olive oil
  • Juice of 1 large fresh lime
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1 tsp salt
  • ½ tsp black pepper
  • Optional for serving: Cilantro-lime rice black beans, corn salsa, fresh avocado, and lime wedges.

Instructions

  • Blend the Marinade: Combine the minced chipotle peppers, adobo sauce, garlic, olive oil, lime juice, cumin, oregano, salt, and black pepper in a blender. Process until the mixture becomes a smooth, consistent paste.
  • Marinate the Meat: Place the chicken in a Ziploc bag or bowl and pour the marinade over it. Massage the meat to ensure full coverage. Refrigerate for at least 30 minutes (up to 4 hours) to allow the smoky flavors to penetrate.
  • Preheat the Pan: Heat a cast iron skillet over medium-high heat with a drizzle of oil. Wait until the pan is very hot (slightly smoking) to ensure a proper sear.
  • Sear for the Char: Add the chicken to the pan. Cook for 6–8 minutes per side. Do not move the chicken too often; let it develop a deep brown, charred crust on both sides.
  • Rest and Cube: Transfer the chicken to a plate and let it rest for 5 minutes. This locks in the juices. Once rested, dice the chicken into small, bite-sized cubes to mimic the Chipotle restaurant style.
  • Assemble: Serve immediately in a burrito bowl or taco shell, garnished with fresh cilantro and a squeeze of lime.

Notes

  • 🔥 The Char Secret: The "burnt" edges are where the flavor lives. If you don't have a cast iron skillet, use a heavy stainless steel pan. Avoid non-stick pans if you want a true restaurant-style char.
  • 🍗 Thighs vs. Breasts: While breasts are leaner, chicken thighs are highly recommended for this recipe. They have a higher fat content, which prevents the meat from drying out during the high-heat searing process.
  • 🌶️ Adobo Substitutes: If chipotle peppers in adobo are unavailable, combine 1 tsp smoked paprika½ tsp cayenne pepper, and 1 tbsp tomato paste mixed with a splash of apple cider vinegar.
  • 🌡️ Temperature Check: To avoid "dry chicken," use a meat thermometer. Remove the chicken from the heat as soon as it hits 165°F (75°C).
  • ❄️ Storage & Reheating: Store in an airtight container for up to 4 days. To reheat without drying the meat, add a teaspoon of water or extra adobo sauce and warm in a skillet over medium heat.                                                  (Nutrition Facts - Per Serving / 1 of 4 servings):
