Steak & Seasoning
- 1.5 lbs Beef Sirloin or Ribeye cut into 1-inch cubes
- 1 tbsp Avocado Oil
- 1 tsp Salt
- ½ tsp Black Pepper
- 1 tsp Smoked Paprika
Garlic Butter Sauce
- 4 tbsp Unsalted Butter divided
- 5-6 Cloves Fresh Garlic minced
- 1 tbsp Fresh Parsley chopped
- 1 tsp Fresh Thyme Leaves
- 1 tsp Worcestershire Sauce optional
Pat steak cubes dry with paper towels and toss with salt, pepper, and paprika.
Heat oil in a large skillet over medium-high heat until shimmering.
Sear steak bites in a single layer for 2 minutes per side until browned. Do not overcrowd the pan.
Reduce heat to medium-low. Add remaining butter and minced garlic to the pan.
Cook garlic for 30 seconds until fragrant, then stir in parsley, thyme, and Worcestershire sauce.
Toss steak bites in the garlic butter sauce to coat evenly.
Serve immediately while hot.
- Pat Dry: Crucial for getting a good sear. Wet meat will steam.
- Don't Crowd: Cook in batches if your pan isn't large enough to ensure a good crust.
- Garlic: Add garlic at the end so it doesn't burn and turn bitter.
- Resting: Let the meat rest for 2 minutes before serving for maximum juiciness.
