Ingredients
  

Steak & Seasoning

  • 1.5 lbs Beef Sirloin or Ribeye cut into 1-inch cubes
  • 1 tbsp Avocado Oil
  • 1 tsp Salt
  • ½ tsp Black Pepper
  • 1 tsp Smoked Paprika

Garlic Butter Sauce

  • 4 tbsp Unsalted Butter divided
  • 5-6 Cloves Fresh Garlic minced
  • 1 tbsp Fresh Parsley chopped
  • 1 tsp Fresh Thyme Leaves
  • 1 tsp Worcestershire Sauce optional

Instructions
 

  • Pat steak cubes dry with paper towels and toss with salt, pepper, and paprika.
  • Heat oil in a large skillet over medium-high heat until shimmering.
  • Sear steak bites in a single layer for 2 minutes per side until browned. Do not overcrowd the pan.
  • Reduce heat to medium-low. Add remaining butter and minced garlic to the pan.
  • Cook garlic for 30 seconds until fragrant, then stir in parsley, thyme, and Worcestershire sauce.
  • Toss steak bites in the garlic butter sauce to coat evenly.
  • Serve immediately while hot.

Notes

  • Pat Dry: Crucial for getting a good sear. Wet meat will steam.
  • Don't Crowd: Cook in batches if your pan isn't large enough to ensure a good crust.
  • Garlic: Add garlic at the end so it doesn't burn and turn bitter.
  • Resting: Let the meat rest for 2 minutes before serving for maximum juiciness.
