Ingredients
  

  • 2 lbs boneless skinless chicken breasts (or chicken thighs for extra juiciness)
  • 1 jar 16 oz chunky red salsa (mild, medium, or salsa verde - do not drain)

  • Optional for serving: warm flour or corn tortillas diced white onions, chopped fresh cilantro, avocado slices, and lime wedges.

Instructions
 

  • Prep & Season: Place 2 lbs of boneless chicken breasts or thighs in a single layer at the very bottom of your Instant Pot inner pot. Sprinkle 1 packet (1 oz) of taco seasoning evenly over the top of the meat.
  • Add Salsa (Do Not Stir): Pour 1 jar (16 oz) of salsa directly over the seasoned chicken. Do not stir or add extra broth/water. The salsa must stay on top of the chicken to prevent thick tomato sugars from sticking to the bottom and causing a "Burn" notice.
  • Pressure Cook: Lock the Instant Pot lid in place and turn the steam release valve to the Sealing position. Press Manual / High Pressure and set the cooking time to 15 minutes (or 20 to 22 minutes if cooking from rock-hard frozen chicken).
  • Natural Release: When the cooking cycle ends, do not touch the valve immediately! Allow a 10-minute Natural Pressure Release (NPR) so the chicken reabsorbs all the savory juices. After 10 minutes, carefully turn the valve to Venting to release any remaining steam, then open the lid.
  • Shred & Glaze (The Sauté Trick): Use two forks to shred the chicken directly inside the pot with the salsa juices. If the mixture looks slightly watery, press Cancel, then select the Sauté (Normal/Medium) function. Let the shredded chicken simmer uncovered for 5 to 8 minutes, stirring frequently, until excess liquid evaporates and the meat is coated in a thick, flavorful red glaze.
  • Serve: Serve immediately in warm tortillas topped with fresh cilantro, diced onions, cotija cheese, and a squeeze of fresh lime juice!

Notes

  • ⚠️ The "Burn" Notice Prevention: Never stir the salsa to the bottom of the Instant Pot before pressure cooking, and do not add extra chicken broth or water. A standard 16 oz jar of salsa provides the exact amount of natural liquid needed for the machine to reach pressure safely without diluting your flavor.
  • 🧊 Cooking From Frozen: Forgot to thaw your meat? No problem! Do not thaw or add water. Place the rock-hard frozen chicken breasts or thighs directly in the pot, top with seasoning and salsa, and simply increase the HIGH pressure cook time to 20–22 minutes followed by a 10-minute Natural Release.
  • 🍗 Breasts vs. Thighs: While chicken breasts shred into classic, clean taco meat, using boneless chicken thighs will yield a richer, juicier flavor that is nearly impossible to dry out or overcook. Both cook at the exact same 15-minute high-pressure timeframe.
  • 🌯 Meal Prep & Storage: Store leftover cooked taco meat in an airtight container in the refrigerator for up to 4 days, or freeze with its juices in heavy-duty freezer bags for up to 3 months. Reheat gently in a skillet or microwave with a splash of water or salsa to restore moisture.
