Ingredients
  

  • 1 lb Flank or Skirt steak
  • 4 Large flour tortillas
  • 2 cups shredded Oaxaca or Monterey Jack cheese
  • 1/2 cup Mayo for Chipotle Mayo
  • 2 tbsp Chipotle peppers in adobo for Chipotle Mayo
  • 1 tsp Lime juice for Chipotle Mayo
  • 1 cup Onions and bell peppers sliced (optional)

Instructions
 

  • Searing the Steak: Heat your grill or skillet to high heat. Sear the marinated steak for 5-6 minutes per side. Let it rest for 10 minutes, then dice into small cubes.
  • Preparing the Chipotle Mayo: Mix the mayo, chipotle peppers in adobo, and lime juice in a small bowl until smooth.
  • Assembly: Place a tortilla in a medium-heat skillet. Spread a layer of chipotle mayo, then add cheese, diced steak, and veggies (if using).
  • The Perfect Crisp: Fold the tortilla in half and cook for 2-3 minutes per side until the tortilla is golden and the cheese is fully melted.
  • Slicing: Let the quesadilla rest for a minute before slicing into triangles. Serve warm.
