1 Chef’s knife To dice the steak into bite-sized pieces

- 4 Large flour tortillas
- 2 cups shredded Oaxaca or Monterey Jack cheese
- 1/2 cup Mayo for Chipotle Mayo
- 2 tbsp Chipotle peppers in adobo for Chipotle Mayo
- 1 tsp Lime juice for Chipotle Mayo
- 1 cup Onions and bell peppers sliced (optional)
Searing the Steak: Heat your grill or skillet to high heat. Sear the marinated steak for 5-6 minutes per side. Let it rest for 10 minutes, then dice into small cubes.
Preparing the Chipotle Mayo: Mix the mayo, chipotle peppers in adobo, and lime juice in a small bowl until smooth.
Assembly: Place a tortilla in a medium-heat skillet. Spread a layer of chipotle mayo, then add cheese, diced steak, and veggies (if using).
