Instructions
Pat the steak cubes with a paper towel until completely dry to ensure a perfect sear.
Heat a heavy cast-iron skillet over medium-high heat and add the avocado oil.
Once the oil is shimmering, add the steak bites in a single layer (do not crowd the pan).
Let the steak sear undisturbed for 2 minutes until a golden-brown crust forms.
Flip the steak bites, then add the butter, minced garlic, and smoked paprika to the pan.
Continuously spoon the melting, foaming garlic butter over the meat for the final 60 seconds.
Remove from heat, garnish with fresh parsley and thyme, and let it rest for 2 minutes before serving.

For the best results, take the steak out of the fridge 15 minutes before cooking to reach room temperature.
